Citrusy Quinoa Salad with Mint and Tropical Fruits recipe

This is a yummy salad with quinoa and fruits like oranges and mango. It has a sweet and tangy dressing made with orange juice and honey. It's colorful and healthy. You can make it for lunch or dinner.

Ingredients

1 cup quinoa
2 cups vegetable broth
1 large orange
1 mango
1/2 small pineapple
1 red bell pepper
1/4 cup fresh mint leaves
1/4 cup orange juice
2 tablespoons honey
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Method

Rinse 1 cup of quinoa under cold water and drain.

In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the broth is absorbed.

Remove the quinoa from heat and let it stand covered for 5 minutes. Then fluff it with a fork and let it cool.

Peel and segment the orange, removing any seeds and the white pith. Cut the segments into bite-sized pieces.

Peel and dice 1 mango and 1/2 small pineapple into bite-sized pieces.

Seed and dice 1 red bell pepper.

Chop 1/4 cup of fresh mint leaves.

In a small bowl, whisk together 1/4 cup of orange juice, 2 tablespoons of honey, 2 tablespoons of extra virgin olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper to make the dressing.

In a large bowl, combine the cooled quinoa, orange segments, diced mango, pineapple, red bell pepper, and chopped mint.

Pour the dressing over the salad and toss until everything is well mixed.

Serve the salad at room temperature or chilled, as preferred.
