Citrus-Infused Shrimp Tacos with Pineapple Salsa recipe

This is a yummy taco recipe with shrimp and a sweet pineapple salsa. You cook the shrimp and mix it with pineapple, onion, and spices. Then you put it in a tortilla and eat it!

Ingredients

1 lb raw peeled shrimp, fresh or frozen
1 pineapple
1 large red onion
2 avocados
1 small bunch cilantro
1 orange
2 limes
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
12 small flour tortillas
1 tablespoon extra virgin olive oil
Salt to taste

Method

If using frozen shrimp, thaw them under cold water and pat dry. If using fresh shrimp, simply pat dry.

Peel and dice the pineapple, avocados, and red onion into small pieces. Place them in a large bowl.

Wash and chop the cilantro, then add it to the bowl with the pineapple mixture.

Zest the orange and one lime, then juice both limes and the orange into the bowl with the pineapple mixture.

Season the shrimp with cayenne pepper, garlic powder, and a pinch of salt.

Heat the olive oil in a grill pan or skillet over medium heat. Cook the shrimp for 1 to 2 minutes per side or until they are opaque.

Warm the tortillas in a microwave or on the skillet until they are soft and pliable.

Combine the pineapple mixture well to create the salsa.

To assemble, place a few shrimp in each tortilla and top with a generous spoonful of pineapple salsa.
