Citrus Chicken & Green Bean Stir Fry with Broccoli Rice recipe

This is a yummy dish with chicken, green beans, and broccoli rice. It has a citrus taste from orange and lemon. You cook the chicken and green beans together and put them on top of the broccoli rice.

Ingredients

450 g chicken breasts, boneless skinless
300 g green beans
2 medium heads broccoli
2 tablespoons olive oil
1 orange
1 lemon
1/4 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons honey
1/2 teaspoon salt
2 tablespoons soy sauce
3 cloves garlic
1 x 3 cm piece ginger root

Method

Wash the green beans and trim the ends. Cut into 5 cm pieces and set aside.

Cut the chicken into bite-sized pieces. Season with salt and black pepper.

Peel and mince the garlic. Peel and mince or grate the ginger.

Grate zest from the lemon and orange to get 1 teaspoon of each. Squeeze out the juice to get 2 tablespoons of each.

In a medium bowl, whisk together the lemon juice, orange juice, cornstarch, minced garlic, ginger, soy sauce, and honey. This is your stir fry sauce.

Wash the broccoli heads and cut into florets. Using a food processor or box grater, grate the broccoli to a rice-like texture.

In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the broccoli rice and cook, stirring occasionally, until tender, about 5-7 minutes. Transfer to a serving dish and keep warm.

In the same skillet, add another tablespoon of olive oil. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Transfer to a plate and keep warm.

In the same skillet, add the green beans and cook, stirring occasionally, until bright green and tender-crisp, about 4-5 minutes.

Return the chicken to the skillet with the green beans and pour in the stir fry sauce. Cook, stirring, until the sauce thickens and coats the chicken and beans, about 2-3 minutes.

Serve the chicken and green bean stir fry over the broccoli rice and enjoy!
