This is a sweet treat made with dates filled with chocolate and topped with almonds. It's like a little candy you can make at home. You mix chocolate and butter, put it inside dates, and add nuts on top. It's yummy and fun to make!

Ingredients

8 Medjool dates, pitted

50 g dark chocolate, chopped

2 Tbsp heavy cream

1/2 Tsp coconut oil

1/4 Tsp almond extract

4 Tbsp crushed almonds

8 small scoops vanilla ice cream

8 fresh cherries

Method

In a small saucepan, combine the chopped dark chocolate, heavy cream, and coconut oil. Heat over low heat until the chocolate is melted and the mixture is smooth.

Remove from heat and stir in the almond extract.

Carefully open the pitted dates and stuff each with the warm chocolate mixture.

Place a small scoop of vanilla ice cream on top of each stuffed date.

Sprinkle the crushed almonds over the ice cream.

Top each date with a fresh cherry.

Serve immediately or chill in the refrigerator for 5 minutes to slightly firm up the chocolate before serving.
