Chilled Soba Noodle Salad with Peanut Dressing recipe

This is a yummy noodle salad. It has noodles, veggies, and a tasty peanut sauce. You mix everything in a big bowl. It's cold and good for hot days. You can eat it for lunch or dinner.

Ingredients

200g soba noodles
1 cup shelled edamame
1 medium carrot, julienned
1 red bell pepper, thinly sliced
1/4 cup chopped green onions
1/4 cup chopped cilantro
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 tablespoons peanut butter
1 tablespoon honey
1 tablespoon grated ginger
1 clove garlic, minced
1 tablespoon lime juice
1 teaspoon chili flakes (optional)

Method

Fill a medium pot with water and bring to a boil. Cook the soba noodles according to the package instructions, usually about 5 minutes. Add the edamame during the last 2 minutes of cooking.

Drain the noodles and edamame and rinse under cold water to cool. Set aside.

In a large bowl, combine the julienned carrot, sliced red bell pepper, chopped green onions, and cilantro.

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, peanut butter, honey, grated ginger, minced garlic, lime juice, and chili flakes if using, until smooth to create the peanut dressing.

Add the cooled noodles and edamame to the bowl with the vegetables. Pour the peanut dressing over the salad and toss to combine everything well.

Serve the chilled soba noodle salad in bowls or on plates. Optionally, garnish with additional cilantro or green onions.
