This is a yummy pasta salad with crunchy snap peas, sweet bell pepper, and a zesty sesame-ginger dressing. It's a cold dish that's perfect for a hot day. You mix pasta with veggies and a tasty sauce. It's easy to make and very delicious!

Ingredients

10 oz rotini pasta
1 cup snap peas, trimmed
1 red bell pepper, diced
1/4 cup red onion, finely chopped
2 tablespoons sesame seeds
1/4 cup soy sauce
1 tablespoon ginger, grated
2 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon sesame oil
1/4 teaspoon salt

Method

Fill a large pot with water, add 1/4 teaspoon of salt, and bring to a boil. Add the rotini pasta and cook for 8-10 minutes until al dente.

While the pasta is cooking, prepare the vegetables: trim the snap peas, dice the red bell pepper, and finely chop the red onion.

In a small bowl, whisk together the soy sauce, grated ginger, honey, rice vinegar, and sesame oil to create the sesame-ginger dressing.

Drain the cooked pasta and rinse under cold water to cool it down. Place it in a large mixing bowl.

Add the snap peas, red bell pepper, red onion, and sesame seeds to the pasta.

Pour the sesame-ginger dressing over the pasta and vegetables. Toss everything together until well coated.

Chill the pasta salad in the refrigerator for at least 10 minutes before serving to allow the flavors to meld.

Serve the chilled pasta salad garnished with extra sesame seeds if desired.
