Chili Lime Shrimp with Herb Noodles recipe

This dish is a bowl of warm noodles mixed with spicy shrimp. It has a special sauce made from herbs and nuts. You will also taste fresh veggies like cucumber and peas. It's yummy and not too hard to make!

Ingredients

200 g Instant Noodles
1 Cucumber
50 g Fresh Cilantro
50 g Fresh Basil
100 g Frozen Peas
200 g Raw Shrimp, peeled and deveined
1 Tbsp Toasted Sesame Seeds
1 Lime, juiced and zested
2 Spring Onions, thinly sliced
30 g Cashew Nuts
1 Tbsp Soy Sauce
2 Tbsp Olive Oil
1/2 tsp Red Chili Flakes

Method

Place the noodles in a bowl and cover with boiling water. Set aside to soften.

In a food processor, combine cilantro, basil, cashew nuts, lime juice, soy sauce, and 1 tablespoon of olive oil. Blend until smooth to make the herb sauce.

Heat the remaining tablespoon of olive oil in a pan over high heat. Add the shrimp, sprinkle with red chili flakes, and cook for about 2 minutes until browned and cooked through.

Drain the noodles and rinse well. Transfer them to a large bowl.

Peel the cucumber into long ribbons, avoiding the seedy center, and add to the bowl with the noodles.

Stir in the frozen peas and the prepared herb sauce. Toss everything together until well mixed.

Add the cooked shrimp to the noodle mixture and toss again.

Garnish with sliced spring onions, toasted sesame seeds, and lime zest.

Serve immediately, with extra lime wedges on the side if desired.
