Chili Lime Chicken Tacos with Mango & Bell Pepper Salsa recipe


This is a yummy taco recipe with chicken and a sweet salsa. You cook chicken with spices and put it in a tortilla. Then you add a salsa made with mango, bell pepper, and lime. It's a fun meal for lunch or dinner!


1 lb boneless, skinless chicken thighs
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
2 tablespoons olive oil
2 ripe mangoes
1 red bell pepper
1/4 red onion
1 lime
8 small flour tortillas
1/4 cup fresh cilantro leaves


Wash and dry the mangoes, bell pepper, lime, and cilantro.
Peel and small dice the mangoes; place in a large bowl.
Trim and small dice the red bell pepper and red onion; add to the bowl with the mango.
Cut the lime in half and squeeze the juice into the bowl, then season with a pinch of salt. Mix the salsa and set aside.
Cut the chicken thighs into small pieces.
In a bowl, mix the chili powder, cumin, garlic powder, onion powder, black pepper, and salt together. Sprinkle over the chicken pieces and toss to coat evenly.
Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook, stirring occasionally, until browned and cooked through, about 10 minutes.
While the chicken cooks, warm the tortillas in another skillet or in the oven wrapped in foil.
Chop the cilantro leaves roughly.
To assemble the tacos, divide the tortillas between plates, add the cooked chicken, and top with mango bell pepper salsa and cilantro. Serve and enjoy!
