4 spring onions, thinly sliced
3 cloves of garlic, minced
20 g ginger, minced
1 red chili, deseeded and finely chopped
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon brown sugar
800 g firm tofu, drained and cut into cubes
2 tablespoons sesame oil
1 tablespoon rice vinegar
1 teaspoon cornstarch
2 tablespoons water

In a small bowl, mix the light soy sauce, dark soy sauce, brown sugar, rice vinegar, and water. Set aside.
In another bowl, create a slurry by mixing cornstarch with 2 tablespoons of water.
Heat sesame oil in a pan over medium heat. Add the minced garlic, ginger, and chopped red chili. Cook for 2 minutes until fragrant.
Pour the soy sauce mixture into the pan and bring to a simmer. Add the cornstarch slurry to thicken the sauce. Stir until the sauce is glossy and slightly thickened.
