Chickpea Veggie Burgers with Spicy Mayo recipe

These chickpea veggie burgers are a delicious twist on a classic. Made with chickpeas, fresh herbs, and spices, they're fried until crispy. Serve them on toasted buns with spicy mayo and fresh veggies for a yummy meal.

Ingredients

200 g Dried Chickpeas
1 Bunch Fresh Cilantro
1 Bunch Fresh Mint
1 Tsp Ground Cumin
1 Tsp Paprika
1/2 Tsp Cayenne Pepper
3 Cloves Garlic
1 Large Red Onion
3 Tbsp All-Purpose Flour
1/2 Tsp Baking Soda
3 Tbsp Olive Oil
2 Tbsp Sriracha
4 Tbsp Mayonnaise
1 Large Lemon
50 g Baby Spinach Leaves
1 Large Tomato
4 Whole Wheat Burger Buns

Method

Place the dried chickpeas in a large bowl, cover with water, and soak overnight.

Drain and dry the chickpeas thoroughly with a kitchen towel.

In a food processor, combine the chickpeas, cilantro, mint, cumin, paprika, cayenne pepper, garlic, half of the red onion, flour, baking soda, and a pinch of salt. Process until you have a coarse mixture.

Form the mixture into four equal-sized patties.

Heat olive oil in a frying pan over medium heat. Cook the patties for about 5 minutes on each side, until golden and crispy.

In a small bowl, mix the mayonnaise with Sriracha and the juice of half a lemon to make the spicy mayo. Adjust the spiciness to taste.

Toast the whole wheat burger buns in a dry pan until lightly golden.

Slice the tomato and the remaining red onion.

Spread a generous amount of spicy mayo on the bottom halves of the toasted buns.

Place a chickpea patty on each bun, followed by tomato slices, red onion, and baby spinach leaves.

Squeeze a little lemon juice over the veggies and place the top half of the bun on each burger.

Serve the chickpea veggie burgers immediately while hot.
