Chickpea Spinach Salad with Roasted Carrots, Walnuts & Feta recipe


This is a yummy salad with roasted carrots, chickpeas, and crunchy walnuts. It has soft feta cheese and is mixed with fresh spinach. It's a healthy meal that's easy to make!


4 medium carrots
1 can (15 oz) chickpeas, drained and rinsed
5 oz fresh spinach
1/4 cup walnuts, chopped
4 oz feta cheese, crumbled
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons lemon juice
1 teaspoon honey
1 small garlic clove, minced


Preheat oven to 425°F.
Peel and cut carrots into 1/2-inch slices. Place on a baking sheet.
Drizzle carrots with 1 tablespoon olive oil, cumin, paprika, salt, and pepper. Toss to coat and spread in an even layer.
Roast in the preheated oven until tender and slightly caramelized, about 25 minutes, stirring halfway through.
In a large bowl, whisk together lemon juice, honey, minced garlic, and remaining 1 tablespoon olive oil to create the dressing.
Add the fresh spinach and chickpeas to the bowl with the dressing. Toss to coat.
Once the carrots are done, add them to the salad and toss gently.
Divide the salad among plates, top with crumbled feta cheese and chopped walnuts before serving.
