This is a yummy sandwich with chickpeas instead of eggs. It has a curry taste and is mixed with veggies like tomatoes and green onions. You put it on bread with some greens. There's also a tasty salad to eat with it.

Ingredients

1 (15 oz) can chickpeas, drained and rinsed
1/2 cup plain vegan yogurt
1 tablespoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon turmeric, ground
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon salt
1/4 cup red onion, finely chopped
1/2 cup celery, diced
1/4 cup raisins
8 slices multigrain bread
4 lettuce leaves
1/2 pint cherry tomatoes, halved
1 (5 oz) package mixed greens
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper to taste

Method

Place chickpeas in a bowl and mash them with a fork or potato masher until flaky in texture.

In a separate bowl, mix together vegan yogurt, lemon juice, curry powder, turmeric, cayenne pepper, black pepper, and salt.

Add the yogurt mixture to the mashed chickpeas and stir until well combined.

Fold in the red onion, celery, and raisins into the chickpea mixture.

Lay out 4 slices of bread and place a lettuce leaf on each.

Divide the chickpea salad evenly among the bread slices, then top with the remaining bread slices to form sandwiches.

In a bowl, whisk together olive oil, red wine vinegar, salt, and pepper to create a simple dressing.

Toss the mixed greens and cherry tomatoes with the dressing until evenly coated.

Serve each sandwich with a portion of the dressed mixed greens on the side.
