Chickpea Patties with Creamy Garlic Sauce & Arugula Salad recipe


This recipe is for delicious chickpea patties with a creamy garlic sauce, served with a fresh arugula salad. It's a healthy meal that's full of flavor. You'll mash chickpeas, make patties, and cook them until golden. Mix a tasty sauce and toss a salad to go with it!


2 x (15 oz) cans chickpeas
1/4 cup whole wheat bread crumbs
1/2 tsp cumin
1/4 tsp garlic powder
1/4 cup fresh cilantro, chopped
4 whole wheat buns
1/2 cup plain Greek yogurt
2 cloves garlic, minced
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
2 cups arugula
1 cup cherry tomatoes, halved
1 tbsp balsamic vinegar


Drain and rinse the chickpeas, then transfer to a large bowl. Mash them until they are mostly broken up with some whole chickpeas left.
Stir in the bread crumbs, cumin, garlic powder, and chopped cilantro until the mixture is well combined.
Form the chickpea mixture into four equal-sized patties.
Heat olive oil in a skillet over medium heat. Cook the patties for 5 minutes on each side or until they are browned and heated through. Transfer to a plate.
In a small bowl, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper to make the creamy garlic sauce.
Toast the whole wheat buns if desired.
In a separate bowl, toss the arugula and cherry tomatoes with balsamic vinegar.
Place the bun halves on plates, top with the chickpea patties, and add a dollop of the creamy garlic sauce. Serve the arugula salad on the side. Enjoy!
