This is a yummy, creamy dip made from chickpeas. You blend chickpeas with lemon, garlic, and tahini to make it. It's smooth and perfect for dipping veggies or bread.

Ingredients

1 x (15 oz.) can chickpeas, drained and rinsed
1 organic lemon, juiced
1/2 cup tahini, well mixed
3 Tbsp. extra virgin olive oil, plus more for drizzling
1 garlic clove, mashed into a paste
1/2 tsp. kosher salt
1/4 tsp. ground cumin
1/4 tsp. paprika, for garnish
2 Tbsp. water, or as needed for consistency

Method

Start by prepping your ingredients: Drain and rinse the chickpeas. Juice the lemon until you have about 3 Tbsp. of juice. Mash the garlic clove into a paste.

Combine the chickpeas, lemon juice, garlic paste, tahini, salt, cumin, and 2 Tbsp. of water in a food processor.

Process the mixture until smooth, scraping down the sides as needed. If the hummus is too thick, add more water, 1 Tbsp. at a time, until you reach the desired consistency.

With the motor running, stream in 3 Tbsp. of olive oil and continue to process until the hummus is very light and creamy.

Taste and adjust the seasoning, adding more salt if needed.

Transfer the hummus to a serving bowl, sprinkle with paprika, and drizzle with a bit more olive oil before serving.
