This is a yummy salad with chickpeas, crunchy apples, and celery. It has sweet grapes and cranberries with tasty pecans. The dressing is creamy and a little tangy. It's good for lunch or a side dish.

Ingredients

1 (10 oz) pkg mixed greens
3 sticks celery
1 Fuji apple
1 (15 oz) can garbanzo beans (chickpeas)
3/4 cup plain Greek yogurt
1/3 lb seedless green grapes
1/2 cup dried cranberries
1 cup pecans
2 tablespoons apple cider vinegar
1/4 teaspoon black pepper
1 tablespoon Dijon mustard
2 tablespoons honey
1/4 teaspoon salt

Method

Wash and dry the mixed greens and set aside.

Drain and rinse the chickpeas, then let them drain completely.

In a large salad bowl, whisk together the Greek yogurt, apple cider vinegar, Dijon mustard, honey, salt, and black pepper to make the dressing.

Cut the Fuji apple into quarters, remove the core and stem, then chop into 1/2-inch pieces and add to the bowl with the dressing.

Dice the celery into 1/2-inch pieces and add to the bowl.

Cut the grapes in half and add them to the bowl along with the dried cranberries.

Chop the pecans and add them to the salad bowl.

Add the chickpeas to the bowl and toss everything together until well coated with the dressing.

Place the mixed greens on plates and top with the chickpea apple salad mixture. Serve immediately.
