Chickpea and Spinach Veggie Burgers recipe

These burgers are made with chickpeas and spinach, making them a healthy meal. They are easy to make and have a yummy, creamy sauce. You put them in a bun with lettuce and tomato.

Ingredients

1 tsp smoked paprika
1 tsp garlic powder
1 small red onion, finely chopped
1 ripe avocado, sliced
4 whole wheat buns
200 g plain Greek yogurt
2 tbsp chopped fresh chives
4 tbsp rolled oats
2 x (400 g) cans of chickpeas, drained and rinsed
1 lemon, zested and juiced
1 cup fresh spinach, chopped
2 tbsp olive oil
4 lettuce leaves
1 tomato, sliced

Method

Preheat your oven to 200°C (390°F).

In a large bowl, mash the chickpeas with a potato masher or fork until mostly smooth.

Add the chopped red onion, smoked paprika, garlic powder, chopped spinach, salt, pepper, and 1 tbsp of olive oil to the mashed chickpeas. Mix in the rolled oats until well combined.

Divide the mixture into 4 equal portions and shape each into a burger patty. Place the patties on a baking sheet lined with parchment paper. Drizzle with the remaining olive oil.

Bake the patties in the oven for 30 minutes, flipping them halfway through, until they are golden and firm.

While the patties are baking, prepare the sauce by combining the Greek yogurt, chopped chives, lemon zest, and lemon juice in a small bowl. Stir well.

Toast the whole wheat buns lightly.

To assemble the burgers, spread some Greek yogurt sauce on the bottom half of each bun. Place a lettuce leaf on top, followed by a burger patty, a slice of tomato, and a few slices of avocado.

Add another dollop of Greek yogurt sauce on top of the avocado, then cap with the top half of the bun.

Serve the chickpea and spinach veggie burgers immediately while they're warm and enjoy!
