Chickpea and Roasted Vegetable Salad with Citrus Dressing recipe

This is a yummy salad with chickpeas and roasted veggies. It has a sweet and tangy dressing made with orange and lemon. You mix beans, veggies, and cheese together. It's good for you and tastes great!

Ingredients

2 x (15 oz) cans garbanzo beans (chickpeas), drained and rinsed
1 large English cucumber, diced
1 large red bell pepper, diced
1 large orange bell pepper, diced
1 medium red onion, diced
5 oz crumbled goat cheese
1/4 cup fresh basil leaves, chopped
1/4 cup fresh mint leaves, chopped
1 orange, juiced
1 lemon, juiced
1/4 cup extra virgin olive oil
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 tbsp honey

Preheat your oven to 425°F (220°C).

Spread the diced red and orange bell peppers on a baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of salt and pepper. Roast in the oven for 20 minutes until slightly charred.

While the peppers are roasting, in a large bowl, whisk together the orange juice, lemon juice, remaining olive oil, thyme, salt, pepper, and honey to create the citrus dressing.

Add the drained chickpeas, diced cucumber, and red onion to the bowl with the dressing. Toss to coat.

Once the peppers are roasted, let them cool for a few minutes, then add them to the bowl.

Add the crumbled goat cheese, chopped basil, and mint to the salad. Gently toss everything together.

Serve the salad on its own or as a side dish. Enjoy your fresh and flavorful meal!
