Chicken & Zucchini Patties with Creamy Dill Salad recipe


This recipe is for delicious chicken and zucchini patties served with a creamy dill salad. You mix ground chicken with grated zucchini to make patties. Then, you cook them until they're golden. The salad has cucumbers and a dill dressing.


1 lb ground chicken
1 large zucchini, grated (about 2 cups)
1/2 cup seasoned breadcrumbs
1 large egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 large cucumber, sliced
1 pint cherry tomatoes, halved
1/2 cup Greek yogurt
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
1/4 teaspoon salt (for salad)
1/4 teaspoon black pepper (for salad)


In a bowl, combine ground chicken, grated zucchini, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix well.
Form the mixture into 8 patties, each about 1/2-inch thick.
Heat olive oil in a large skillet over medium heat. Cook the patties for about 5 minutes on each side, until golden brown and cooked through.
In a separate bowl, mix sliced cucumber and cherry tomatoes.
In a small bowl, whisk together Greek yogurt, chopped dill, lemon juice, salt, and pepper to create the dressing.
Pour the dressing over the cucumber and tomato mixture and toss to coat.
Serve the chicken and zucchini patties with the creamy dill salad on the side.
