This is a creamy, tomato-based curry with chunks of chicken. It's full of spices and served with rice or bread. It's a warm, comforting meal that's perfect for dinner.

Ingredients

1.5 lb boneless, skinless chicken thighs, cut into chunks
2 tbsp olive oil
1 large onion, finely chopped
4 garlic cloves, minced
1 tbsp ginger, grated
3 tbsp tikka masala paste
400 ml tomato sauce
1 tbsp tomato paste
1 tbsp apple cider vinegar
1 tbsp honey
1 cinnamon stick
4 cardamom pods, crushed
150 ml heavy cream
2 tbsp fresh cilantro, chopped
Basmati rice, cooked, for serving
Naan bread, for serving (optional)

Method

Heat olive oil in a large skillet over medium heat. Add the chicken and cook until browned. Remove chicken and set aside.

In the same skillet, add the onion, garlic, and ginger. Cook until the onion is soft, about 5 minutes.

Stir in the tikka masala paste, tomato sauce, tomato paste, vinegar, honey, cinnamon stick, and cardamom pods. Bring to a simmer.

Add the chicken back to the skillet. Cover and simmer for 20 minutes.

Stir in the heavy cream and simmer for another 10 minutes, or until the chicken is cooked through and the sauce has thickened.

Remove the cinnamon stick and cardamom pods. Garnish with chopped cilantro.

Serve with basmati rice and naan bread if desired.
