This recipe is for chicken tacos with a sweet mango salsa and a creamy cilantro sauce. You'll cook chicken and make a salsa with mango, onion, and lime. Then, mix a sauce with cilantro and yogurt. Put it all in tortillas to eat!

Ingredients

2 ripe mangos
1 medium red onion
2 limes
1 small bunch cilantro
1 cup plain Greek yogurt
1 tablespoon olive oil
1 pound chicken breasts
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small flour tortillas
1 tablespoon honey

Peel and dice the mangos and add to a medium bowl.

Peel and finely chop the red onion; add half to the mango bowl and save the rest for the sauce.

Juice the limes and divide between the two bowls.

Wash and dry the cilantro. Finely chop the leaves and stems; add half to the mango bowl and the other half to a small bowl for the sauce.

In the small bowl with cilantro, add the Greek yogurt and honey. Mix well to create the cilantro sauce. Season with salt to taste.

Slice the chicken breasts into thin strips and transfer to another medium bowl.

Season the chicken with cumin, paprika, salt, and pepper; toss to coat.

Heat the olive oil in a skillet over medium-high heat.

Add the chicken strips to the skillet; cook until browned and cooked through, about 5 to 7 minutes per side.

While the chicken cooks, warm the tortillas in a dry skillet or microwave until heated through.

Mix the mango salsa with a pinch of salt.

To serve, place the chicken strips in the center of the tortillas, add the mango salsa, and drizzle with the cilantro sauce.
