Chicken & Sun-Dried Tomato Salad with Baguette Croutons recipe


This is a yummy salad with chicken and sun-dried tomatoes. It has crunchy bread on top. You mix it all with a tasty dressing. It's good for lunch or dinner!


2 Baguettes
4 Sun-Dried Tomatoes in Oil
4 Chicken Breasts
30 g Shaved Parmesan Cheese
20 g Fresh Arugula
1/4 Tsp Paprika
1/2 Lemon, juiced
1 Tbsp Balsamic Vinegar
2 Tbsp Honey
3 Tbsp Extra Virgin Olive Oil
Salt and Pepper to taste


Preheat the oven to 175°C (350°F). Cut the baguettes into 1-inch cubes and spread them on a baking sheet. Toast in the oven for 10 minutes or until golden brown and crispy.
Cut the sun-dried tomatoes into small pieces and place them in a large salad bowl.
Season the chicken breasts with salt, pepper, and paprika. In a skillet over medium heat, cook the chicken in 1 tablespoon of olive oil for about 10 minutes on each side, or until fully cooked and golden brown. Let it cool, then slice into strips.
In a small bowl, whisk together lemon juice, balsamic vinegar, honey, and the remaining 2 tablespoons of olive oil to create the dressing. Season with salt and pepper to taste.
Add the sliced chicken, shaved Parmesan, and fresh arugula to the bowl with the sun-dried tomatoes.
Pour the dressing over the salad and toss until everything is well coated.
Top the salad with the toasted baguette croutons just before serving to maintain their crunch.
