Chicken & Spinach Penne recipe


This is a yummy pasta with chicken and spinach. You cook chicken pieces and mix them with spinach and cheese. You also add pasta and a creamy sauce. It's a warm and filling meal.


2 tablespoons olive oil
2 boneless chicken breasts, cut into bite-sized pieces
200 g baby spinach
3 cloves of garlic, minced
1 teaspoon red pepper flakes
150 ml dry white wine
250 ml heavy cream
300 g mozzarella cheese, shredded
1 tablespoon fresh basil, chopped
Zest of 1 lemon
400 g penne pasta
Salt and pepper to taste


Heat the olive oil in a large pan over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through.
While the chicken is cooking, boil the penne pasta in a large pot of salted water according to package instructions until al dente.
To the pan with the chicken, add the minced garlic and red pepper flakes. Cook for 1 minute until fragrant.
Pour in the white wine and let it simmer for 2 minutes to reduce slightly.
Stir in the heavy cream and bring to a gentle simmer. Add the baby spinach and cook until it wilts.
Mix in the shredded mozzarella cheese until it melts into the sauce. Add the chopped basil and lemon zest, then season with salt and pepper to taste.
Drain the pasta and add it to the pan with the chicken and spinach sauce. Toss everything together until the pasta is well coated.
Serve the pasta hot, garnished with extra basil if desired.
