Chicken Satay Lettuce Wraps with Spicy Slaw recipe

This recipe is a fun twist on wraps. We use lettuce to hold a mix of spicy slaw, chicken, and a yummy peanut sauce. It's like a tiny, tasty meal you can eat with your hands!

Ingredients

1 x (12 oz) pkg broccoli slaw
1 lb chicken breasts, boneless skinless
2 cloves garlic, minced
2 x 1 inch pieces ginger root, minced
1/4 cup peanuts, roasted unsalted, chopped
2 red bell peppers, julienned
8 large lettuce leaves
1/4 tsp black pepper
1 tbsp honey
1/4 cup natural peanut butter
1/4 tsp salt
2 tbsp soy sauce
1 tbsp virgin coconut oil
1 tbsp lime juice
1/4 tsp crushed red pepper flakes

Method

Season the chicken breasts with salt and black pepper.

Heat a skillet over medium-high heat and add coconut oil.

Cook the broccoli slaw in the skillet, stirring frequently, until tender-crisp, about 2-3 minutes. Transfer to a bowl and set aside.

In the same skillet, add the chicken and cook until done, about 2-3 minutes per side. Remove from heat, let it cool slightly, and then slice into strips.

Prepare the sauce by whisking together the minced garlic, ginger, peanut butter, honey, soy sauce, lime juice, and a splash of water in a small bowl.

Toss the broccoli slaw with half of the sauce, the chopped peanuts, and red pepper flakes.

Lay out the lettuce leaves and divide the slaw among them, topping with julienned bell peppers and chicken strips.

Drizzle the remaining sauce over the chicken.

Roll the lettuce leaves to enclose the filling. Serve immediately.
