Chicken Salad with Apples, Walnuts, Basil, Feta & Cranberries recipe


This is a yummy salad with chicken, apples, and walnuts. It has cheese and dried cranberries too. You mix it all with a tasty dressing. It's good for lunch or dinner and easy to make!


1/2 cup walnuts, chopped
1 English cucumber
120 ml balsamic vinaigrette
1 small package fresh basil
1 x 150 g block feta cheese
2 red apples
4 cups mixed salad greens
1 x 900 g rotisserie chicken, white and dark meat
1/4 teaspoon black pepper
1/4 teaspoon salt
1/3 cup dried cranberries


Wash and dry the fresh produce.
Chop the salad greens into bite-sized pieces if needed and place them in a large bowl.
Trim and slice the cucumber into half-moons and add them to the bowl with the greens.
Core the apples and cut them into thin slices or wedges. Add the apple slices to the salad bowl.
Pick basil leaves off the stems; discard stems and tear the leaves into smaller pieces. Add them to the bowl.
Remove the chicken meat from the skin and bones, and tear it into bite-sized pieces. Add the chicken to the salad bowl.
Crumble the feta cheese and add it to the bowl along with the walnuts, dried cranberries, balsamic vinaigrette, salt, and pepper.
Toss everything together until well combined.
Divide the salad among plates or bowls and serve immediately.
