Chicken & Red Apple Curry with Jasmine Rice recipe

This is a warm, flavorful dish with tender chicken and sweet red apples in a curry sauce. It's served over jasmine rice, which has a lovely aroma. The curry is easy to make and perfect for dinner.

Ingredients

1 cup jasmine rice
2 cups water
1.5 lb chicken breasts, boneless skinless
2 tsp ground turmeric
3 Fuji apples
1 large red onion
1/4 tsp ground cinnamon
1 tbsp honey
2 tbsp olive oil
3 cloves garlic
1 tbsp curry powder
1 tsp salt
1/2 tsp black pepper
14 fl oz coconut milk

Method

Rinse the jasmine rice under cold water, then transfer to a saucepan. Add 2 cups of water and a pinch of salt, and bring to a boil. Once boiling, cover and simmer on low heat until water is absorbed, about 15 minutes. Remove from heat and let it stand covered for 5 minutes.

While rice is cooking, cut the chicken breasts into 1-inch pieces and season with 1 tsp turmeric, salt, and pepper.

Heat olive oil in a large pan over medium-high heat. Add the chicken and cook until browned, about 5 minutes. Transfer to a plate and set aside.

Dice the red onion and apples into 1/2-inch pieces. Mince the garlic.

In the same pan, add the red onion and cook until soft, about 3 minutes. Add the garlic, remaining 1 tsp turmeric, curry powder, and cinnamon. Cook until fragrant, about 1 minute.

Add the diced apples and honey to the pan, stirring to combine. Cook for 2 minutes until apples start to soften.

Return the chicken to the pan and add coconut milk. Bring to a simmer and cook until the chicken is done and the apples are tender, about 10 minutes.

Fluff the jasmine rice with a fork and divide among bowls. Top with the chicken and apple curry. Serve hot.
