Chicken, Pear & Walnut Lettuce Wraps recipe


This is a yummy salad with chicken, pears, and walnuts. You put it in lettuce to make a wrap. It's crunchy and has a sweet taste. You can make it for lunch or a light dinner. It's easy to make and very tasty!


2 tablespoons walnuts, chopped
4 large Romaine lettuce leaves
2 sticks celery, diced
1 lb chicken breasts, boneless skinless
2 ripe Bartlett pears, cored and diced
1 small bunch chives, finely chopped
1 tablespoon honey
1/2 teaspoon black pepper
1 tablespoon Dijon mustard
1 tablespoon extra virgin olive oil
1/2 cup Greek yogurt
1/4 teaspoon salt


Heat a skillet over medium heat.
Cut the chicken breasts in half horizontally to form thin fillets. Season with salt and pepper.
Add olive oil to the skillet and cook the chicken until browned and cooked through, about 3 to 4 minutes per side. Transfer to a plate to cool.
While the chicken is cooking, wash and dry the lettuce leaves and prepare the other fresh produce.
In a large bowl, whisk together the Greek yogurt, honey, Dijon mustard, salt, and pepper.
Add the diced pears, diced celery, and chopped chives to the bowl with the dressing.
Toast the chopped walnuts in a dry skillet over medium heat until fragrant, about 2 minutes, then add to the bowl.
Once the chicken has cooled, shred it with your hands or chop it into bite-sized pieces; add to the bowl with the other ingredients. Mix until well combined.
Spoon the chicken mixture onto the center of each lettuce leaf, fold in the sides, and roll up to create wraps.
Serve the lettuce wraps immediately or chill until ready to serve.
