Chicken Lo Mein with Broccoli & Carrots recipe

This is a yummy noodle dish with chicken, broccoli, and carrots. You cook noodles and mix them with chicken and veggies. The sauce makes it taste very good. It's fun to eat with chopsticks or a fork!

Ingredients

2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon honey
1/2 teaspoon ground ginger
1 tablespoon cornstarch
1/4 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
1 pound chicken breast, thinly sliced
3 cloves garlic, minced
1 medium carrot, julienned
2 cups broccoli florets
8 ounces spaghetti
Salt to taste

Method

In a large pot of boiling salted water, cook spaghetti according to package instructions until al dente. Drain and set aside.

In a small bowl, whisk together soy sauce, oyster sauce, honey, ground ginger, cornstarch, and red pepper flakes with 1/4 cup of water to make the sauce. Set aside.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken and stir-fry until cooked through, about 5-6 minutes. Remove chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add garlic, carrots, and broccoli. Stir-fry until the vegetables are tender-crisp, about 3-4 minutes.

Return the chicken to the skillet with the vegetables. Add the cooked spaghetti and the sauce. Toss everything together and cook for an additional 2 minutes, until the sauce has thickened and coats the noodles and ingredients evenly.
