Chicken Kale Caesar Salad recipe

This is a yummy salad with chicken and kale. It has a special dressing made with yogurt and lemon. You put cheese and crunchy bread on top. It's good for you and tastes great!

Ingredients

2 skinless chicken breasts, butterflied
2 tsp olive oil
2 anchovies, chopped
1/2 clove garlic, crushed
2 tbsp fat-free Greek yogurt
3 tbsp grated Parmesan cheese
1 tbsp lemon juice
150 g kale, stalks removed and roughly chopped
2 slices whole grain bread, toasted and cut into croutons

Method

Rub the kale with 1/2 tsp olive oil using your hands until the leaves are evenly coated.

Combine the anchovies, garlic, Greek yogurt, 2 tbsp of Parmesan cheese, and lemon juice in a blender. Add 1 tsp olive oil and blend until smooth. Add water if needed to get a pourable dressing consistency.

Season the chicken breasts with salt and pepper, then brush with 1 tsp olive oil.

Heat a grill pan over high heat and cook the chicken for 3 minutes on each side or until fully cooked. Let it rest under foil.

Divide the kale onto two plates. Slice the rested chicken and place on top of the kale.

Drizzle the dressing over the salad and chicken.

Sprinkle the remaining 1 tbsp of Parmesan cheese over the salads.

Garnish with homemade whole grain croutons made from the toasted bread.
