Chicken, Feta, Caramelized Onion Flatbread with Honey Drizzle Recipe

This is a yummy flatbread pizza with chicken, feta cheese, and sweet onions. It's cooked until crispy and topped with fresh greens and a sweet honey drizzle. It's perfect for lunch or dinner and is very easy to make!

Ingredients

4 flatbreads or naan
2 tablespoons extra virgin olive oil
1/2 cup feta cheese, crumbled
2 cups cooked chicken breast, shredded
1 large red onion, thinly sliced
1/4 cup honey
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups mixed salad greens
1 tablespoon balsamic reduction

Method

Preheat oven to 400°F (205°C).

In a skillet over medium heat, add 1 tablespoon of olive oil and the sliced red onion. Cook, stirring occasionally, until onions are caramelized, about 15 minutes.

Place flatbreads on a baking sheet and brush each with the remaining olive oil. Evenly distribute the caramelized onions, shredded chicken, and crumbled feta cheese over the flatbreads.

Bake in the preheated oven until the flatbreads are golden and crispy, about 10-15 minutes.

While the flatbreads are baking, toss the mixed salad greens with balsamic reduction, salt, and pepper in a bowl.

Remove the flatbreads from the oven and let them cool slightly.

Top each flatbread with a handful of dressed salad greens.

Drizzle honey over each flatbread and sprinkle with dried thyme.

Cut into slices and serve immediately.
