Chicken Burger Lettuce Wrap with Avocado Aioli and Grilled Veggies recipe

This is a yummy chicken burger wrapped in fresh lettuce with a creamy avocado aioli. It has grilled veggies and cheese. It's a fun meal for lunch or dinner. You can make it in about 45 minutes.

Ingredients

4 large leaves of romaine lettuce
1 lb ground chicken
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1 tbsp Worcestershire sauce
1/2 cup diced bell peppers
1/2 cup diced zucchini
1 tbsp olive oil
1 ripe avocado
2 tbsp mayonnaise
1 tbsp lemon juice
1/4 tsp garlic powder
1/2 cup shredded cheddar cheese
1/4 cup pickled red onion slices

Method

In a bowl, mash the avocado with mayonnaise, lemon juice, and garlic powder to make the avocado aioli. Set aside.

In another bowl, mix ground chicken, egg, Worcestershire sauce, salt, and pepper. Form into 4 patties.

Heat a grill pan over medium heat and brush with olive oil. Grill the chicken patties for about 5-6 minutes on each side or until fully cooked.

In the same pan, add diced bell peppers and zucchini, and grill for about 5 minutes, until slightly charred and soft.

Wash and dry the romaine lettuce leaves.

Assemble the wraps by placing a chicken patty on each lettuce leaf, top with grilled veggies, a spoonful of avocado aioli, shredded cheddar cheese, and some pickled red onion slices.

Wrap the lettuce around the fillings and serve immediately.
