Cherry Tomato, Spinach & Feta Flatbread with Mixed Greens recipe


This is a yummy flatbread pizza with cherry tomatoes, spinach, and feta cheese. It's baked until the cheese is melty and served with a fresh mixed greens salad. It's a fun meal that's easy to make!


4 flatbreads or naan
1 cup cherry tomatoes, halved
2 cups fresh spinach leaves
1 cup feta cheese, crumbled
3 tablespoons extra virgin olive oil
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup red onion, thinly sliced
1 tablespoon red wine vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
4 cups mixed greens


Preheat your oven to 400°F (200°C).
In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, salt, and pepper.
Place the flatbreads on a baking sheet. Spread the garlic oil mixture evenly over each flatbread.
Top the flatbreads with halved cherry tomatoes, fresh spinach leaves, and crumbled feta cheese.
Bake in the preheated oven for 10-12 minutes, until the edges are golden and the cheese is slightly melted.
While the flatbreads are baking, prepare the salad dressing by whisking together 1 tablespoon of olive oil, red wine vinegar, honey, Dijon mustard, salt, and pepper in a large bowl.
Add the mixed greens and red onion to the bowl with the dressing and toss to coat.
Remove the flatbreads from the oven and let them cool for a couple of minutes.
Cut the flatbreads into wedges and serve with the mixed greens salad on the side.
