Cheesy Spinach and Mushroom Ravioli recipe


This is a yummy pasta dish with cheese and veggies. It has ravioli filled with cheese, spinach, and mushrooms in a creamy sauce. It's topped with cheese and crunchy nuts. It's good for dinner and not too hard to make.


1/2 Yellow Onion
1 Garlic Clove
150 g Button Mushrooms
2 Tbsp Tomato Paste
4 Tbsp Heavy Cream
250 g Cheese Ravioli
20 g Spinach Leaves
40 g Mozzarella Cheese
2 Tbsp Walnuts
1 Tbsp Olive Oil
1/4 tsp Dried Oregano
1/4 tsp Dried Basil
Salt to taste
Black Pepper to taste


Bring a large pot of salted water to a boil for the ravioli.
Chop the onion and mushrooms, and mince the garlic.
Heat 1 tbsp of olive oil in a pan over medium heat. Add the chopped onion with a pinch of salt and cook for 3-4 minutes until soft.
Add the minced garlic and cook for another minute.
Stir in the tomato paste and cook for 2 minutes, then add the chopped mushrooms and cook until they release their moisture and become golden.
Pour in the heavy cream and add dried oregano and basil. Let it simmer for 3 minutes until the sauce thickens slightly.
Meanwhile, cook the ravioli in the boiling water according to the package instructions, usually about 4 minutes, then drain.
Add the spinach to the sauce and cook until just wilted.
Toss the drained ravioli into the sauce, gently stirring to coat. Season with salt and pepper to taste.
Transfer the ravioli and sauce to serving plates.
Top with shredded mozzarella cheese and crushed walnuts.
Serve hot and enjoy!
