This is a cheesy quesadilla filled with mushrooms and spinach. It's a warm, melty treat with veggies tucked inside. You cook the veggies, put them in a tortilla with cheese, and cook it until it's crispy.

Ingredients

1 tbsp olive oil
2 cups sliced mushrooms
2 cups fresh spinach
1 tsp garlic powder
4 large flour tortillas
2 cups shredded mozzarella cheese
1/2 cup diced tomatoes
1/4 cup chopped fresh cilantro
Salt and pepper to taste

Method

Preheat your oven to 200°C (392°F).

In a pan, heat 1 tbsp of olive oil over medium heat. Add 2 cups of sliced mushrooms and cook for 5 minutes until they're soft.

Add 2 cups of fresh spinach to the pan with the mushrooms. Cook until the spinach wilts, about 2 minutes. Sprinkle 1 tsp of garlic powder and add salt and pepper to taste.

Lay out 4 large flour tortillas on a flat surface. Spread the mushroom and spinach mixture evenly on one half of each tortilla.

Sprinkle 1/2 cup of shredded mozzarella cheese over the veggies on each tortilla. Add a sprinkle of diced tomatoes and fresh cilantro on top of the cheese.

Fold the tortillas in half over the filling to create a half-moon shape.

Place the filled tortillas on a baking sheet and bake in the preheated oven for 10 minutes, or until the tortillas are crispy and the cheese has melted.

Cut each quesadilla into 3 pieces and serve hot. Enjoy your cheesy spinach and mushroom quesadillas!
