Cheesy Spinach and Mushroom Lasagna Rolls recipe

This dish is like lasagna but rolled up. It has pasta, cheese, spinach, mushrooms, and tomato sauce. It's cooked in the oven and is very cheesy and yummy. It's good for dinner and not too hard to make.

Ingredients

8 lasagna noodles
1 tablespoon olive oil
2 cups fresh spinach, chopped
1 cup mushrooms, sliced
2 cups marinara sauce
1 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 egg
1 teaspoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh basil leaves for garnish

Method

Preheat your oven to 375°F (190°C).

Boil a large pot of water and cook the lasagna noodles according to the package instructions, then drain and lay them flat on a sheet of parchment paper.

In a skillet, heat olive oil over medium heat. Add garlic, spinach, and mushrooms, cooking until the spinach is wilted and mushrooms are soft.

In a bowl, mix together ricotta cheese, egg, oregano, salt, and pepper.

Spread about 2 tablespoons of marinara sauce on the bottom of a baking dish.

Take each lasagna noodle and spread a layer of the ricotta mixture on top. Then add a layer of the spinach and mushroom mixture.

Roll up the noodles and place them seam side down in the baking dish.

Pour the remaining marinara sauce over the lasagna rolls.

Sprinkle mozzarella and Parmesan cheese on top of the sauce.

Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 5 minutes or until the cheese is bubbly and slightly golden.

Garnish with fresh basil leaves before serving.
