Cheesy Potato Salad with Herbs and Bacon recipe


This is a yummy potato salad with cheese and bacon. It has potatoes, cheese, green onions, and bacon bits. You mix it all with mayo and mustard. It's good for picnics or lunch.


500 g baby potatoes
150 g sharp cheddar cheese
4 green onions
1 small bunch of parsley
1 small red onion
4 tbsp mayonnaise
1 tbsp Dijon mustard
50 g pickled jalapeños, chopped
4 tbsp bacon bits
Salt to taste
Black pepper to taste


Wash and boil the baby potatoes in salted water until tender, about 15 minutes.
While the potatoes are boiling, grate the cheddar cheese and finely chop the green onions, parsley, and red onion.
In a large bowl, mix the mayonnaise and Dijon mustard together.
Drain the potatoes and let them cool for a few minutes. Then, while still warm, cut them into halves or quarters, depending on size.
Add the warm potatoes to the mayo and mustard mixture and toss to coat.
Stir in the grated cheese, green onions, parsley, red onion, and chopped jalapeños. Season with salt and pepper to taste.
Sprinkle bacon bits over the top of the salad.
Serve warm or chill in the refrigerator before serving.
