This is a yummy breakfast dish. It's like a sandwich made with bread, cheese, and a tasty spread. Then it's dipped in eggs and cooked until it's golden. A fried egg goes on top. It's cheesy and good!

Ingredients

4 slices of Whole Grain Bread
100 g Grated Gouda Cheese
100 g Grated Swiss Cheese
30 g Vegemite
50 g Salted Butter, Softened
4 Large Eggs
1/2 teaspoon Black Pepper
1/2 teaspoon Salt
1 tablespoon Olive Oil
4 Fresh Basil Leaves, Chopped

Method

1
Spread the softened butter on one side of each bread slice. Then, spread Vegemite on two of the buttered slices.
2
On top of the Vegemite spread slices, evenly distribute the Gouda and Swiss cheeses, then cover with the remaining slices of bread, buttered side down, to make two sandwiches.
3
In a bowl, beat 3 eggs with salt and pepper, and stir in the chopped basil leaves.
4
Heat the olive oil in a pan over medium heat.
5
Dip both sandwiches in the egg mixture, ensuring all sides are coated.
6
Place the sandwiches in the pan and cook for about 3-4 minutes on each side or until golden brown and the cheese has melted.
7
Remove the sandwiches and keep them warm.
8
In the same pan, add a little more oil if needed, and crack the remaining egg. Fry until the white is set but the yolk is still runny, about 3-4 minutes.
9
Serve each French toast sandwich with a fried egg on top.
