This is a yummy sandwich with ham, cheese, and a fried egg on top. It's like a breakfast and lunch in one! You make a cheesy sauce, put it on bread with ham, and cook it. Then, you fry an egg and put it on the sandwich. It's really good and not too hard to make!

Ingredients

8 slices of Whole Wheat Bread
4 Large Eggs
150 g Unsalted Butter
80 g All-Purpose Flour
1/2 Tsp Cayenne Pepper
8 slices of Smoked Turkey
600 ml Whole Milk
250 g Sharp Cheddar Cheese
1 Tbsp Vegetable Oil
1/2 Tsp Salt
1/4 Tsp Black Pepper

Method

Preheat your oven to 180°C (356°F).

Grate the cheddar cheese and set aside.

In a saucepan, melt 50 g of butter over medium heat. Once melted, whisk in the flour and cayenne pepper to create a roux.

Gradually pour in the milk, constantly stirring to prevent lumps, until the mixture thickens into a smooth sauce.

Stir in half of the grated cheddar cheese until melted and season the sauce with salt and pepper. Remove from heat.

Spread each slice of whole wheat bread with a thin layer of the remaining butter.

Place four slices of bread on a baking sheet, buttered side down. Spread each with a generous amount of the cheese sauce, then top with two slices of smoked turkey.

Cover with the remaining slices of bread, buttered side up, and spread more cheese sauce on top.

Sprinkle the rest of the cheddar cheese over the sandwiches and bake in the oven for about 10 minutes, or until the cheese is bubbly and golden.

While the sandwiches are baking, heat the vegetable oil in a frying pan over medium heat.

Crack the eggs into the pan, season with salt and pepper, and fry until the whites are set but the yolks are still runny.

Place the baked sandwiches on plates and top each with a fried egg. Serve immediately.
