This is a yummy dish where potatoes are baked and filled with ham, cheese, and broccoli. It's like a big hug in a potato skin. You scoop out the potato, mix it with tasty things, and put it back in. Then you bake it again until it's all warm and the cheese is melted.

Ingredients

4 large baking potatoes, approximately 12 ounces each
2 tablespoons unsalted butter
2 cups broccoli florets, chopped
1/2 cup red onion, diced
1/2 cup low sodium vegetable broth
1 cup cooked ham, diced
1/4 teaspoon black pepper
1/2 cup Greek yogurt
Cooking spray
1/2 cup reduced-fat sharp cheddar cheese, shredded

Method

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Bake the potatoes for 75 minutes or until they are soft inside.

While the potatoes are baking, melt the butter in a skillet over medium heat. Add the chopped broccoli and diced red onion, and sauté for 5 minutes.

Pour in the vegetable broth, bring to a simmer, cover, and cook until the broccoli is tender, about 5 minutes.

Stir in the diced ham and black pepper, then remove from heat.

Once the potatoes are done, let them cool slightly. Cut a lengthwise slice off the top of each potato and scoop out the insides into a bowl, leaving a 1/4-inch-thick shell.

To the potato insides, add the Greek yogurt and mash until creamy.

Fold the broccoli and ham mixture into the mashed potatoes.

Spray the potato shells with cooking spray and fill them with the potato mixture.

Top each potato with shredded cheddar cheese.

Bake in the oven for another 15 minutes, or until the cheese is melted and bubbly.
