Stashcook

This recipe is for cheesy chicken meatball subs. You mix chicken, spices, and cheese to make meatballs. Then you cook them and put them in bread with sauce and more cheese. It's a yummy, cheesy sandwich!

Ingredients

200 g Ground Chicken
1/2 Tsp Salt
1/2 Tsp Black Pepper
1/2 Tsp Smoked Paprika
1/2 Tsp Dried Oregano
1/2 Tsp Dried Basil
2 Tbsp Fresh Chives, chopped
1 Egg
50 g Breadcrumbs
6 Hoagie Rolls
200 g Marinara Sauce
100 g Cheddar Cheese, shredded
50 g Butter
2 Garlic Cloves, minced
1 Tbsp Olive Oil

Method

1
Preheat your oven to 190°C (375°F).
2
In a large bowl, combine the ground chicken, salt, pepper, smoked paprika, dried oregano, dried basil, chives, egg, and breadcrumbs. Mix well.
3
Form the mixture into 6 even-sized meatballs and place them onto a baking tray lined with parchment paper.
4
Bake the meatballs in the preheated oven for 20 minutes or until they are cooked through.
5
While the meatballs are baking, cut the hoagie rolls in half lengthwise without cutting all the way through, creating a pocket for the meatballs.
6
In a small pan, melt the butter with the minced garlic over low heat to make garlic butter.
7
Brush the inside of each hoagie roll with the garlic butter and a drizzle of olive oil, then toast them in the oven for 5 minutes or until slightly crispy.
8
Warm the marinara sauce in a saucepan over medium heat.
9
Once the meatballs are done, add them to the warm marinara sauce and coat them well.
10
Place one meatball into each hoagie roll, spoon extra marinara sauce over the meatballs, and sprinkle with shredded cheddar cheese.
11
Return the subs to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
12
Serve the cheesy chicken meatball subs hot and enjoy!
