Cheesy Beef Taco Spaghetti with Spinach and Sour Cream recipe

This is a yummy pasta dish with beef and taco flavors. It's all cooked in one pot. We use spaghetti, cheese, and spinach to make it. You top it with sour cream when it's done. It's fun to make and eat!

Ingredients

1 tbsp extra virgin olive oil
1 lb ground beef
1 medium red onion, diced
2 cloves garlic, minced
2 tsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp salt
8 oz spaghetti
2 cups beef broth
1 cup tomato sauce
1 red bell pepper, diced
2 cups baby spinach, roughly chopped
1 cup shredded cheddar cheese
1/4 cup sour cream

Method

Heat the olive oil in a large pot over medium-high heat.

Add the ground beef, diced red onion, and minced garlic to the pot. Cook until the beef is browned and crumbly.

Stir in the chili powder, cumin, paprika, and salt with the beef mixture.

Break the spaghetti in half and add it to the pot along with the beef broth and tomato sauce.

Bring the mixture to a boil, then reduce the heat to medium-low. Cover and simmer for 10 minutes, stirring occasionally.

Mix in the diced red bell pepper and baby spinach. Continue to simmer until the pasta is tender and the liquid is mostly absorbed, about 5 more minutes.

Remove the pot from the heat and stir in the shredded cheddar cheese until melted and well combined.

Serve the cheesy taco spaghetti in bowls, topped with a dollop of sour cream. Enjoy!
