Cheese Tortellini with Broccoli and Almonds recipe


This is a yummy pasta dish with cheese tortellini, green broccoli, and crunchy almonds. It's mixed with garlic, lemon, and cheese. You boil pasta, cook veggies, and mix it all with cheese on top. It's easy to make for dinner!


250 g Cheese Tortellini
50 g Almonds, sliced
1 Bunch of Broccoli
2 Tbsp Olive Oil
3 Garlic Cloves, minced
1 Tsp Dried Basil
Zest & Juice of 1 Lemon
100 g Fresh Spinach
50 g Grated Pecorino Cheese
Salt and Pepper to taste


Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the cheese tortellini and cook according to the package instructions, usually about 2 minutes.
While the tortellini is cooking, heat a large pan over medium heat. Add the almonds and toast them until golden brown, then remove and set aside.
Cut the broccoli into small florets and add them to the boiling tortellini during the last 3 minutes of cooking to blanch.
In the same pan used for almonds, heat the olive oil over medium heat. Add the minced garlic and dried basil, and cook for 1 minute until the garlic is fragrant but not browned.
Drain the tortellini and broccoli, reserving 1/4 cup of the pasta water. Add the tortellini, broccoli, and reserved pasta water to the pan with the garlic and basil. Stir to combine.
Add the fresh spinach to the pan and cook until just wilted, about 1 minute.
Remove from heat and stir in the lemon zest, lemon juice, and grated Pecorino cheese. Season with salt and pepper to taste.
Serve the tortellini and broccoli mixture topped with the toasted almonds and additional Pecorino cheese if desired.
