Cheese-Stuffed Bread Bites with Creamy Herb Dip Recipe

These are yummy little bread bites filled with melted cheese. They come with a creamy dip that has herbs and garlic in it. You make dough, put cheese inside, and bake them. Then you mix up the dip to eat with the bread.

Ingredients

1/2 Tsp Sugar
1 Tbsp Olive Oil
2 Tsp Active Dry Yeast
160 ml Lukewarm Water
260 g Bread Flour
1/2 Tsp Salt
120 g Cheddar Cheese, cubed
1 Tbsp Fresh Rosemary, chopped
120 g Sour Cream
120 g Mayonnaise
1 Tsp Apple Cider Vinegar
Zest of 1/2 Lemon
2 Garlic Cloves, minced
100 g Unsalted Butter
1 Tbsp Fresh Thyme, chopped

Method

Start by making the dough. Combine the sugar, olive oil, and yeast with the lukewarm water. Let it sit for 10 minutes until it becomes frothy.

In a large bowl, mix the bread flour and salt. Make a well in the center and pour in the yeast mixture. Gradually mix with your hands until a dough forms.

Transfer the dough to a floured surface and knead for about 10 minutes until it's smooth and elastic. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

While the dough is rising, prepare the herb dip. Combine sour cream, mayonnaise, apple cider vinegar, lemon zest, and half of the minced garlic in a bowl. Stir in the chopped rosemary and season with salt and pepper to taste. Cover and refrigerate until ready to serve.

Preheat the oven to 200°C (390°F). Cut the cheddar cheese into 1 cm cubes.

Once the dough has doubled, punch it down and divide into 20g pieces. Flatten each piece, place a cube of cheddar in the center, and seal the edges. Place the filled dough balls on a baking sheet lined with parchment paper, cover with a cloth, and let them rise for another 30 minutes.

For the garlic-herb butter, melt unsalted butter in a pan and add the remaining minced garlic and fresh thyme. Cook for 1-2 minutes until fragrant.

Brush the dough balls with half of the garlic-herb butter and bake for 12-15 minutes until golden brown.

Remove the bread bites from the oven, brush with the remaining garlic-herb butter, and serve warm with the chilled herb dip.
