Cheddar soda bread with spring onion butter recipe

No yeast? No problem! Whip-up a batch of cheesy Irish soda bread for lunch, with lashings of homemade spring onion butter on top

Ingredients

150g plain flour, plus extra for dusting
150g wholemeal flour
1 tsp bicarbonate of soda
100g mature cheddar, grated
250ml buttermilk
4 spring onions, finely chopped
100g salted butter, at room temperature

Method

Heat the oven to 200C/fan 180C/gas 6. Mix the flours, bicarb and 1½ tsp salt in a bowl. Add the cheese, keeping a small handful back, and toss together. Add enough buttermilk to make a soft but not too sticky dough.

Knead briefly then form into a ball. Put on a floured baking sheet and slash a cross on top. Sprinkle with the rest of the cheese. Bake for 30-40 minutes or until the loaf sounds hollow when you tap the bottom. Meanwhile, mix the butter and spring onions together, and tip into a serving dish.

Serve the soda bread just-warm, with the spring onion butter on the side.
