Cauliflower Fritters with Spicy Mango Dip recipe

These are yummy little bites made from cauliflower. They are fried until they are crispy. You dip them in a sweet and spicy sauce made from mango. It's a fun snack that's a little bit spicy and very tasty.

Ingredients

300 g Cauliflower florets
1 Medium Red Onion
A handful of Fresh Cilantro
2 Green Chillies
3 cm Knob of Ginger
1/2 Tsp Fennel Seeds
1/2 Tsp Crushed Coriander Seeds
1/4 Tsp Ground Cumin
1 Tsp Garam Masala
150 g Chickpea Flour (Besan)
200 g Water
Vegetable Oil for frying
200 g Mango Chutney
1 Tbsp Apple Cider Vinegar
Juice of 1 Lime
2 Tbsp Fresh Mint, chopped
1 Tbsp Agave Syrup or Honey

Method

For the spicy mango dip, in a bowl, combine the mango chutney, agave syrup, apple cider vinegar, and lime juice. Add the chopped mint and stir well. Set aside for serving.

Heat vegetable oil in a deep frying pan or wok until it reaches 180°C (350°F).

Chop the cauliflower into small, bite-sized pieces. Finely slice the red onion, chop the cilantro, and finely chop the green chillies. Peel and grate the ginger.

In a dry pan, lightly toast the fennel seeds and crushed coriander seeds for about 1 minute until fragrant. Grind them slightly using a mortar and pestle.

In a mixing bowl, combine the ground cumin, garam masala, toasted fennel seeds, crushed coriander seeds, chickpea flour, and water. Season with salt to taste and mix to form a thick batter.

Add the cauliflower, red onion, cilantro, green chillies, and grated ginger to the batter. Stir until the vegetables are well coated.

Carefully drop spoonfuls of the batter into the hot oil and fry for 3-4 minutes or until the fritters are golden brown and crispy.

Remove the fritters with a slotted spoon and drain on paper towels.

Serve the cauliflower fritters hot with the spicy mango dip on the side.
