Cauliflower & Broccoli Gratin with Smoked Gouda recipe

This is a cheesy baked dish with cauliflower and broccoli. It has smoked gouda cheese and a crispy topping. It's warm, gooey, and perfect for a family dinner. You mix veggies with cheese sauce, top with more cheese and bake until golden.

Ingredients

1 medium Cauliflower, cut into florets
1 medium Broccoli, cut into florets
75 g All-Purpose Flour
150 g Smoked Gouda, shredded
200 g Sharp Cheddar, shredded
700 ml Milk
1 tsp Dijon Mustard
2 tbsp Butter
1/2 tsp Paprika
1/2 tsp Salt
1/4 tsp Black Pepper
1 small Onion, diced
2 cloves Garlic, minced
100 g Panko Breadcrumbs
2 tbsp Olive Oil

Method

Preheat oven to 180°C (356°F).

In a large pot, bring water to a boil and blanch the cauliflower and broccoli florets for 3 minutes, then drain and set aside.

In the same pot, melt butter over medium heat and cook the diced onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

Sprinkle the flour over the onion and garlic, stirring for 2 minutes to cook the flour.

Gradually whisk in the milk, ensuring there are no lumps. Add the Dijon mustard, paprika, salt, and pepper. Continue to cook, stirring constantly until the sauce thickens, about 5-7 minutes.

Remove the pot from heat and stir in 100 g of smoked gouda and 150 g of sharp cheddar until melted and smooth.

Add the blanched cauliflower and broccoli to the cheese sauce, stirring to coat the vegetables evenly.

Transfer the mixture to a greased baking dish.

In a small bowl, mix the panko breadcrumbs with olive oil, then sprinkle over the top of the cauliflower and broccoli mixture.

Top with the remaining 50 g of smoked gouda and 50 g of sharp cheddar.

Bake in the preheated oven for 50 minutes, or until the top is golden brown and bubbly.

Let it cool for a few minutes before serving.
