This is a yummy salad with cauliflower and smoked turkey. It has crunchy celery and fresh chives. You mix it with a creamy dressing. It's good for lunch or a side dish.

Ingredients

1/2 medium head cauliflower
1 stick celery
1 tablespoon fresh chives, chopped
8 oz smoked turkey breast, chopped
1/2 shallot
1/4 teaspoon black pepper
1/2 teaspoon curry powder
1 tablespoon Dijon mustard
1/4 teaspoon garlic powder
1/2 cup Greek yogurt
1/4 teaspoon paprika
1 tablespoon apple cider vinegar
1/4 teaspoon salt

Method

Wash and dry the fresh produce.

Cut the cauliflower into 1-inch florets and slice the stems into smaller pieces.

Fill a medium saucepan about halfway with hot water from the tap; cover and bring to a boil over high heat.

Once the water is boiling, uncover, then add the cauliflower and salt; stir for a few seconds. Cook until tender-crisp, about 3 minutes. Drain and set aside to cool slightly.

In a medium bowl, combine Greek yogurt, Dijon mustard, apple cider vinegar, curry powder, garlic powder, paprika, and black pepper; whisk to create the dressing.

Peel and mince the shallot. Add to the bowl with the dressing.

Trim and small dice the celery. Add to the bowl.

Chop the chives and add to the bowl.

Chop the smoked turkey breast into small pieces. Add to the bowl, along with the cooled cauliflower, and stir to combine the salad.

Divide the salad between bowls to serve and enjoy!
