Healthy and delicious, carb free banana pancakes - perfect for breakfast or brunch. Serve them on Pancake Day.

Ingredients

1.5 bananas (make sure they a quite big bananas and the riper the better), mashed
2 eggs
½g baking powder (just a pinch - and make sure it's gluten free as not all of them are)
olive oil

Method

Start by peeling and mashing the bananas until - you need quite a lumpy consistency

In a separate bowl crack the eggs, add the baking powder and whisk

Now combine all the ingredients and you're ready to start frying

Heat the olive oil in a frying pan and once hot, spoon the pancake mixture (a couple of tablespoons) into the pan

Cook on a medium heat for a couple of minutes then flip and cook the other side for about a minute

Once cooked set to one side and repeat until all the mixture is used up

Serve!
