Caramelized Onion and Feta Tart recipe


This is a yummy pie with sweet onions and tangy feta cheese. The onions are cooked until they're sweet. Then we mix them with cheese and put them in a crust. It's baked until it's crispy and golden.


3 large onions, thinly sliced
2 medium sweet potatoes, peeled and diced
4 cloves of garlic, minced
150 g feta cheese, crumbled
1 sheet of puff pastry, about 230 g
1 teaspoon dried thyme
120 ml heavy cream
1 egg, beaten
2 tablespoons olive oil
Salt and pepper to taste


Preheat the oven to 200°C (390°F).
In a large pan, heat the olive oil over medium-low heat. Add the sliced onions and a pinch of salt, and cook for about 30 minutes, stirring occasionally, until the onions are caramelized and golden brown.
While the onions are cooking, boil the diced sweet potatoes in water for about 10 minutes until tender. Drain and set aside.
Add the minced garlic to the onions and cook for an additional 1 minute until fragrant.
Stir in the heavy cream, dried thyme, and cooked sweet potatoes to the onion mixture. Cook for another 2 minutes, then remove from heat. Season with salt and pepper to taste.
Gently fold in the crumbled feta cheese into the onion and sweet potato mixture.
Unroll the puff pastry and place it into a 9-inch pie dish, trimming any excess pastry. Prick the bottom with a fork.
Pour the onion, sweet potato, and feta mixture into the pastry-lined pie dish.
Brush the edges of the pastry with the beaten egg.
Bake in the preheated oven for 35 minutes, or until the pastry is puffed and golden brown.
Let the tart cool for 10 minutes before serving. Enjoy with a side salad or as is.
