These are fluffy and buttery biscuits made with buttermilk. They're perfect for breakfast or as a side dish. You mix flour, butter, and buttermilk, then bake until golden!

Ingredients

3 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons salt
8 tablespoons unsalted butter, chilled and cut into pieces
1 cup cold buttermilk
1 tablespoon unsalted butter, melted, for brushing

Method

Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Add the chilled butter pieces to the flour mixture and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Pour the cold buttermilk into the flour mixture and gently stir until just combined. Do not overmix.

Turn the dough out onto a floured surface and gently pat it together into a rectangle about 1 inch thick.

Fold the rectangle in thirds like a letter, then pat it out again to about 1 inch thick. Repeat this process two more times.

Use a 2 1/2-inch round biscuit cutter to cut out biscuits. Place them on the prepared baking sheet, ensuring they are spaced about 2 inches apart.

Brush the tops of the biscuits with melted butter.

Bake in the preheated oven until the biscuits are flaky and golden brown, about 15 minutes.

Remove from the oven and let cool slightly on the baking sheet before serving.
