Broccoli, Bell Pepper & Cheddar Frittata recipe

This is a yummy egg dish with broccoli, red bell pepper, and cheddar cheese. It's cooked in a pan and then in the oven. It's good for breakfast or any meal. You can share it with friends or family.

Ingredients

6 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup diced red bell pepper
1 cup chopped broccoli
3/4 cup shredded cheddar cheese
1/2 cup halved cherry tomatoes

Method

Preheat your oven to the broil setting.

Wash and dry the broccoli and red bell pepper. Cut the broccoli into small florets and dice the bell pepper.

In a large bowl, whisk together the eggs, milk, salt, and pepper.

Heat olive oil in a skillet over medium heat. Add the diced bell pepper and cook for 2 minutes, until slightly softened.

Add the broccoli to the skillet and cook for another 3 minutes, until it turns bright green and is tender.

Pour the egg mixture over the vegetables in the skillet. Cook without stirring for 5 minutes, until the edges start to set.

Sprinkle the shredded cheddar cheese evenly over the top of the frittata.

Place the skillet in the oven and broil for 3 minutes, or until the top is set and the cheese is melted and slightly golden.

Cut the frittata into wedges and serve with the halved cherry tomatoes on the side.
